ALT White chocolate, on the other hand, contains no cocoa solids but contains cocoa butter and sugar along with milk solids. Cocoa beans are composed of ~50% cocoa butter which is used to make white chocolate. But it's the absence of cocoa solids that leads to the debate about whether white chocolate qualifies as "real" chocolate. For certain, without cocoa solids, white chocolate lacks the same deep, rich flavor associated with dark and milk chocolates. What do you think? Do you think white chocolate is real chocolate?

ALT What's left behind is a hard chocolate puck that is then ground up to produce cocoa powder. There are several different kinds of cocoa powder depending on how the powder is treated: unsweetened cocoa powder, natural cocoa powder, dark cocoa powder, Dutch process or alkalized cocoa powder and black cocoa powder.

ALT The quality of craft chocolate can vary widely depending on factors like the skill of the chocolate-maker, the sourcing of cocoa beans and production methods used. Craft chocolate makers are passionate about making high-quality products, and take great pride in their work. They may use traditional methods or experiment with new flavors. But in reality, craft chocolate does not always translate to high-quality products, so it's good to read reviews and explore different brands to find ones that aligns with your taste preferences and quality standards.

ALT Ingredients: * 2 tablespoons of unsweetened cocoa powder * 1 can (14 ounces) of sweetened condensed milk * 2 tablespoons of unsalted butter * Chocolate sprinkles or chocolate jimmies (for coating) * Butter (for greasing hands) Method: * Grease a baking tray with butter. This will help prevent the mixture from sticking to the tray. * In a saucepan, combine cocoa powder, sweetened condensed milk and unsalted butter. Mix them well until you have a smooth mixture. * Place the saucepan over low to medium-low heat. Stir continuously so that the mixture does not burn or stick to the bottom of the pan. * Stir vigorously and cook over medium heat until the mixture thickens, about 10 minutes. It should have a fudgy consistency, similar to brownie batter. * When the brigadeiro mixture is ready, remove it from the heat. Spread it on a tray and allow it to cool a bit before the next step. * Grease your hands with butter and scoop a small portion of the mixture and roll it into a ball

ALT Ingredients: For the Churros: * 1 cup water * ½ cup butter * ½ tsp vanilla extract * 2 Tbsp sugar * ¼ tsp salt * 1 cup flour * 3 eggs (at room temperature) Method: * In a medium saucepan, combine water, sugar, salt, and butter. Bring to a boil over medium heat. * Remove the saucepan from heat and stir in the flour until the mixture forms a ball. Let it cool for a few minutes. * Heat oil for frying in a deep fryer or a large pot to 375°F. * Transfer the dough to a pastry bag fitted with a large star tip. * Pipe strips of dough into the hot oil using the pastry bag. Fry until golden brown, turning them once if necessary. This should take about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels. * If you want to sugar coat them, mix together ½ cup sugar and 1 tsp cinnamon. Roll the churros in the mixture while still warm.

ALT Hot Chocolate: * 2 cups milk * ½ cup heavy cream * 3.5 ounces dark chocolate, chopped * 2 Tbsp cocoa powder * 2-3 Tbsp sugar (adjust to taste) * ½ tsp vanilla extract * Pinch of salt Method * In a saucepan, combine milk and heavy cream. Warm over medium heat until it's hot but not boiling. * Add the chopped dark chocolate and cocoa powder to the hot milk mixture. Whisk continuously until the chocolate is melted and the mixture is smooth. * Add sugar, vanilla extract, and pinch of salt. Continue to whisk until the sugar is dissolved. * Once everything is well mixed and heated through, pour the hot chocolate into mugs. Serve the churros with the hot chocolate for a delicious treat. Enjoy!
