Shepherd's pie began as the Sunday joint being passed through a mincer on Monday, and the reason the potato lid was crisp is that it was spread with the dripping from the same roast.
The mincer was cast iron, clamped to the edge of the kitchen table with a screw, and the cold remains of Sunday's leg of lamb or mutton went through it with the fat and the gristle, because the fat was what made Monday's dinner taste of Sunday's. The mince went into a dish with an onion, the gravy from the roasting tin that had set overnight into jelly, and a shake of Worcester sauce, and the mashed potato went over the top in a thick lid, forked into ridges, dotted with dripping, and baked until the ridges browned.
The first printed version was 1791, as cottage pie, and the word shepherd's arrived later for the mutton version, which is the proper one. Beef makes a cottage pie. A shepherd minds sheep.
It was dinner on Monday in every house that had roasted on Sunday, which was every house that could. The joint fed the family on Sunday, the pie on Monday, and the bone made the soup on Tuesday, and a leg of mutton was three dinners from one animal with nothing bought in but a few potatoes and an onion.
A good one cuts clean, with the mince dark and wet underneath and the potato forming a crust that peels back from the dish, and the first forkful has the lid and the meat together. Peas, if there were peas.
The one in the supermarket chiller is made with lean minced lamb that has never seen a roasting tin, a sauce thickened with starch, and a potato topping made with semi-skimmed milk and a spread, which is why it comes out of the oven the same colour it went in.
The dripping was what made it Sunday twice.

Fulham just posted this photo from 2018 when Josh King (who was 11 at the time) had the opportunity to be a mascot, standing next to club captain Tom Cairney.π€―π
Fast forward eight years and Josh has made 57 first-team appearances for Fulham, while Tom Cairney is still club captain.π―
From being a mascot with Tom Cairney to playing alongside himβ¦ what a story.π€©π

Thames Water is borrowing Β£2.4bn at 10% interest so it can keep funding dividends, even though bosses know it won't be able to repay the money when the company goes tits up. This is corrupt and the government should make it clear that taxpayers won't pick up the tab.

A Melton Mowbray pork pie is pork, wrapped in pork fat, sealed with pork jelly. It was built to survive a day in the coat pocket of a man on a galloping horse.
The pastry is like no other. You boil water with a block of lard until it melts, pour it hot into the flour, and work it while it is still warm. The result can be raised by hand into a tall case that will stand up on its own. It bakes as hard as a tin.
The filling is fresh pork, chopped with a knife, with nothing added but salt and pepper. It cooks grey, the colour of a roast, and a real one is never pink.
Then comes the clever part. As the meat cooks it shrinks away from the crust and leaves a gap. So when the pie comes out of the oven, hot stock made from boiled trotters is poured in through a hole in the lid. It sets into a jelly that fills every space and shuts out the air. That is what makes the pie keep.
It was the food of the hunting field. The grooms and riders of Leicestershire needed something that would not fall apart at a fence, and from the 1830s Melton was sending them to London by stagecoach.
And the pork was there for a reason. The same countryside makes Stilton. Cheesemaking leaves gallons of whey, and whey fattens pigs. The cheese fed the pig, and the pig became the pie.
The recipe has been protected by law since 2009.
Every part of it breaks a modern rule. It is also a complete meal you can eat with one hand, that needs no fridge and no packaging, and they solved it 200 years ago with a pig.

The analysis that I liked the most was Jakirovicβs:
"Fulham were far superior to us in every aspectβwith and without the ball, in winning first and second balls, and in duels.
They completely overwhelmed us. It was a case of men against boys.
#FFC should have more points."

AA knows what a gem #ffc have in Josh King, heβs integral to the emerging spine this team have.
There will be a battle to keep him, itβs one the club mustnβt lose.
Alongside the King/Charles axis, Berge is transformed, what a midfield! With TC ready to augment. Itβs coming!
