Let's talk barrels! 🛢️🍇
We recently received a new shipment of oak barrels, which you see here lined up in our barrel room. We sourced these beauties from legendary barrel producer, François Freres Cooperage, located in the heart of the Burgundy wine region.

🍷Micro-Oxygenation: When water and alcohol evaporate and oxygen is let in (small amounts), which helmature the wine.
🍷Phenol Interaction: Phenols are compounds found in grapes and oak that make up flavors, aromas, and mouthfeel (like vanillin and lactones).
🍷Tannins and Flavor: The toast level of a barrel determines which flavors it will give off. The lighter the toast, the more green, almond, and delicate flavors are prominent. The heavier the toast, the more mocha, vanilla, and almond flavors.
