But I struggle with how anyone could do anything else.
How can you carry on doing something that is intimate and meant to be enjoyable for both parties when one person no longer wants to do it, and by extension would be loathing you for continuing?

In my view, carrying on in that situation is sociopathic behaviour.
As a further note on how respect preserves human connection: afterward, I remained platonic friends with both women.
