James Earl Jones was a legend with a career spanning almost 70 years. It's easy to pick something obvious to recommend but I want to point you to Larry Cohen's 1990 film THE AMBULANCE. Jones has a lot of fun playing a gum chewing detective. A type of role he didn't usually get.
