CREAMY AVOCADO BEEF SALAD 🥩🥑🥗 "Juicy, creamy and full of goodness" Ingredients : For the Beef: 400g beef steak (sirloin or ribeye) 1 tbsp olive oil 3 garlic cloves, minced 1 tsp smoked paprika ½ tsp chilli flakes ½ tsp freshly ground black pepper ½ tsp salt 1 tsp lemon juice ½ tsp dried oregano For the Salad: 2 ripe but firm avocados, diced 1 cup cherry tomatoes, halved 1 small red onion, thinly sliced 2 cups fresh lettuce, roughly chopped ½ cucumber, diced ¼ cup fresh coriander or parsley, chopped 1 tbsp fresh lemon juice For the Creamy Garlic Herb Dressing: ½ cup mayonnaise ¼ cup Greek yoghurt or sour cream 1 garlic clove, finely minced 1 tbsp lemon juice 1 tsp Dijon mustard 1 tbsp olive oil 1 tbsp chopped fresh coriander or parsley ½ tsp black pepper Salt to taste A pinch of chilli flakes Method: 1. Prepare the Beef: Pat the beef steak dry with paper towels. In a bowl, combine olive oil, minced garlic, smoked paprika, chilli flakes, black pepper, salt, lemon juice and oregano. Rub the seasoning mixture all over the steak. Allow it to marinate for 20–30 minutes. 2. Cook the Beef: Heat a grill pan or heavy skillet over medium-high heat. Cook the steak for approximately 3–5 minutes per side, depending on its thickness and preferred doneness. For food safety, cook whole beef steaks to at least 63°C (145°F), followed by a 3-minute rest. Transfer to a plate and allow the beef to rest for 5–10 minutes before slicing thinly against the grain. 3. Prepare the Creamy Dressing: In a small bowl, combine mayonnaise, Greek yoghurt, garlic, lemon juice, Dijon mustard and olive oil. Add chopped coriander or parsley, black pepper, salt and chilli flakes. Whisk until smooth, creamy and beautifully blended. Adjust the lemon juice and seasoning to taste. 4. Assemble the Salad: Place the chopped lettuce, cucumber, cherry tomatoes and red onion in a large serving bowl. Add the diced avocado and freshly sliced grilled beef. Sprinkle with fresh coriander or parsley and gently toss to combine. 5. Add the Creamy Dressing: Pour the creamy garlic herb dressing over the salad. Gently toss until all the ingredients are lightly coated, taking care not to mash the avocado. Finish with freshly cracked black pepper, a little chilli flakes and an extra squeeze of lemon juice. Serving Suggestions: Serve immediately while the beef is still slightly warm and the vegetables are fresh and crisp. Enjoy it as a satisfying lunch, a light dinner or a beautiful side dish. It also pairs wonderfully with toasted garlic bread, warm pita bread or crispy potato wedges. Tips: For the best flavour, use perfectly ripe avocados and freshly grilled beef.
