Cheesecake-Stuffed Chocolate Chip Cookies
Yield: 12–16 cookies | Prep time: 25 minutes | Chilling time: 30 minutes | Bake time: 11–14 minutes
Ingredients
Cheesecake Filling
- 225 g cream cheese, softened
- 80 g icing sugar
- 1 tsp vanilla extract
Cookie Dough
- 225 g unsalted butter, softened
- 200 g brown sugar
- 100 g granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 375 g all-purpose flour
- 1 tsp baking soda
- 2 tsp cornstarch (optional)
- ½ tsp salt
- 300 g chocolate chips, plus extra for topping
Method
1. Prepare the filling: Beat cream cheese, icing sugar and vanilla until smooth. Portion into 12–16 small balls and freeze for 20–30 minutes.
2. Make the dough: Cream butter and both sugars until fluffy. Beat in eggs and vanilla. In a separate bowl, combine flour, baking soda, cornstarch and salt. Gradually mix into the wet ingredients, then fold in chocolate chips.
3. Stuff the cookies: Divide dough into portions. Flatten each portion, place a frozen cheesecake ball in the centre and wrap the dough completely around it. Seal the edges and roll into balls.
4. Chill: Refrigerate the stuffed dough balls for 15–20 minutes while preheating the oven to 175°C.
5. Bake: Arrange on a parchment-lined baking tray, leaving space between cookies. Bake for 11–14 minutes, until the edges are lightly golden and the centres remain soft.
6. Cool: Add extra chocolate chips on top if desired. Cool on the tray for 5 minutes, then transfer to a wire rack.
Chef’s Tips
- Seal the dough completely to prevent cheesecake filling from leaking.
- Avoid overbaking to maintain a soft, chewy texture.
- Refrigerate baked cookies in an airtight container because of the cream cheese filling.
- For best quality, allow refrigerated cookies to soften slightly before serving.

Classic Homemade Beef Lasagna
Prep Time: 30 minutes | Cook Time: 1 hour 10 minutes | Total Time: 1 hour 40 minutes | Servings: 8
Ingredients
For the Meat Sauce
450 g (1 lb) ground beef
1 medium onion, finely chopped
3–4 garlic cloves, minced
1 can (800 g) crushed tomatoes
1 can (425 g) tomato sauce
2 tablespoons tomato paste
1 teaspoon sugar (optional)
1 teaspoon dried oregano
1 teaspoon dried basil
½ teaspoon dried thyme or Italian seasoning
Salt and black pepper, to taste
1–2 tablespoons olive oil
For the Cheese Filling
425 g (15 oz) ricotta cheese
1 large egg
½ cup (50 g) grated Parmesan cheese
1 cup (100 g) shredded mozzarella cheese
2 tablespoons chopped fresh parsley
A pinch of salt and black pepper
For Assembly
9–12 lasagna noodles, or no-boil lasagna sheets
3–4 cups (300–400 g) shredded mozzarella cheese
Extra grated Parmesan cheese, for topping
Fresh basil or parsley, for garnish
Instructions
1. Prepare the meat sauce: Heat the olive oil in a large saucepan over medium heat. Add the onion and cook until softened. Stir in the garlic, followed by the ground beef. Cook until the beef is browned, breaking it apart with a spoon. Drain excess fat if necessary.
2. Simmer the sauce: Stir in the tomato paste and cook for 1 minute. Add the crushed tomatoes, tomato sauce, sugar, oregano, basil, thyme, salt, and black pepper. Bring to a gentle simmer and cook uncovered for 25–40 minutes, stirring occasionally, until thick and flavourful.
3. Make the cheese filling: In a mixing bowl, combine the ricotta, egg, Parmesan, 1 cup of mozzarella, parsley, salt, and black pepper. Mix until evenly combined.
4. Cook the lasagna noodles: Bring a large pot of salted water to a boil. Cook the noodles according to the package instructions until al dente. Drain and arrange them on a lightly oiled tray to prevent sticking. Skip this step if using no-boil sheets, following the package instructions instead.
5. Prepare for assembly: Preheat the oven to 190°C (375°F). Spread a thin layer of meat sauce over the bottom of a 23 × 33 cm (9 × 13-inch) baking dish.
6. Layer the lasagna: Arrange a layer of noodles over the sauce. Spread some of the ricotta mixture on top, followed by meat sauce and shredded mozzarella. Repeat the layers until the ingredients are used, finishing with meat sauce, mozzarella, and grated Parmesan.
7. Bake covered: Cover the dish loosely with aluminium foil, ensuring it does not touch the cheese. Bake for 25 minutes.
8. Finish baking: Remove the foil and bake for another 15–25 minutes, until the cheese is melted, bubbling, and golden in spots. If needed, broil briefly for a more deeply browned topping, watching carefully.
9. Rest and serve: Allow the lasagna to rest for 10–15 minutes before slicing. Garnish with fresh basil or parsley and serve warm.
Chef’s Notes
Build flavour: Allow the meat sauce to simmer until thick and rich for a deeper tomato flavour.
Avoid excess moisture: A watery sauce can make the lasagna difficult to slice cleanly.
Cook pasta al dente: Slightly firm noodles hold their structure during baking.
Distribute the cheese evenly: Spread the ricotta mixture carefully and reserve enough mozzarella for a generous topping.
Create neat slices: Rest the lasagna after baking to help the layers set.
Customise the filling: Substitute half the ground beef with Italian sausage or add sautéed mushrooms for extra flavour.
Prepare ahead: Assemble the lasagna in advance, refrigerate, and bake when needed. Allow extra baking time if cooking directly from the refrigerator.
Store leftovers safely: Refrigerate in an airtight container for up to 3–4 days or freeze in individual portions for longer storage.

- ⅓ teaspoon salt, if using water
For the Salad
- 1 can (400 g) chickpeas, drained and rinsed
- 2 cups cherry tomatoes, halved
- 1½ cups cucumber, diced
- ¾ cup corn kernels, fresh, frozen, or canned
- ¾ cup black olives, halved
- ½ medium red onion, finely chopped
- ⅓ cup fresh parsley, chopped
- 1 ripe avocado, diced
For the Dressing
- 4 tablespoons extra-virgin olive oil

Method
1. Cook the quinoa: Rinse the quinoa thoroughly under cold running water. Combine it with the vegetable broth or salted water in a saucepan. Bring to a boil, reduce the heat, cover, and simmer for 10–15 minutes until the liquid is absorbed and the grains are tender.
2. Cool the quinoa: Remove from the heat and let it stand, covered, for 5 minutes. Fluff with a fork and spread out to cool completely.

5. Prepare the vegetables: In a large salad bowl, combine the cherry tomatoes, cucumber, corn, black olives, red onion, and chopped parsley.

Chef’s Notes
- Rinse quinoa thoroughly before cooking to remove its naturally bitter coating.
- Cook the quinoa in vegetable broth for a deeper, savoury flavour.
- Allow the quinoa to cool completely before combining it with the vegetables to maintain a fresh, fluffy texture.
- Dice the vegetables into similar-sized pieces for an attractive presentation and balanced flavour in every bite.

Feta and Cranberry Chickpeas with Lemon Vinaigrette
Feta and Cranberry Chickpeas with Lemon Vinaigrette
Serves: 4-6 as a side | Prep: 15 min | Cook: 30-35 min
Ingredients
For the roasted chickpeas:
2 cans (15 oz each) chickpeas, drained, rinsed, and patted very dry
2 tbsp olive oil
1 tsp smoked paprika
1 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
Pinch of cayenne (optional)
For the lemon vinaigrette:
1/4 cup olive oil
3 tbsp fresh lemon juice
1 tsp lemon zest
1 tbsp honey or maple syrup
2 cloves garlic, minced
1 tsp Dijon mustard
1/2 tsp dried oregano
Salt and black pepper, to taste
For the mix-ins:
3/4 cup crumbled feta cheese
3/4 cup dried cranberries
1/3 cup red onion, finely diced
1/3 cup fresh parsley, chopped
2 tbsp fresh dill, chopped
1 tsp red pepper flakes
For garnish:
Extra feta and cranberries
Fresh dill sprigs
Lemon slices
Flaky salt
Instructions
1. Roast the chickpeas
Preheat the oven to 400°F. Drain and rinse the chickpeas, then dry them thoroughly with a kitchen towel — any moisture left on them means they steam instead of crisping.
Toss with olive oil, paprika, cumin, garlic powder, onion powder, salt, pepper, and cayenne. Spread in a single layer on a parchment-lined sheet pan without crowding.
Roast for 30-35 minutes, shaking the pan every 10 minutes, until golden and crisp at the edges. They'll firm up further as they cool.
2. Make the vinaigrette
While the chickpeas roast, whisk together the olive oil, lemon juice, lemon zest, honey, garlic, Dijon, oregano, salt, and pepper. Taste and adjust — it should be bright and a little sharp.
3. Cool slightly, then dress
Let the chickpeas cool for 5-10 minutes. Dressing them while still piping hot makes them soggy. Pour the vinaigrette over the warm chickpeas and toss well so they soak up the flavor.
4. Add the mix-ins
Fold in the feta, cranberries, red onion, parsley, dill, and red pepper flakes. If you want the feta to stay in distinct crumbles like the photo, toss gently with a spatula rather than stirring hard.
5. Rest and serve
Let the salad sit for 15-20 minutes so the flavors meld, then taste and adjust the salt and lemon. Serve at room temperature or chilled, topped with extra feta, a few cranberries, dill sprigs, lemon slices, and a pinch of flaky salt.
Tips
Dry the chickpeas properly. It's the single biggest factor in whether they roast crisp or turn mushy. Some people pat them dry and let them air-dry 15 minutes on a tray.
Don't over-roast for a make-ahead salad. If you plan to eat it the next day, pull them at the 25-minute mark — they soften in the dressing regardless, so slightly under-crisp holds up better.
Reserve some dressing. The chickpeas absorb the vinaigrette as it sits. Keep a spoonful back and toss it through just before serving.
Balance matters more than exact amounts. Taste after mixing — add lemon if it's flat, honey if it's too sharp, salt if it tastes dull.
Feta swap: goat cheese for a creamier result, or shaved Parmesan for a sharper one.
Cranberry swap: dried cherries, tart dried apricots, or pomegranate arils.
Add protein: grilled chicken, shredded rotisserie chicken, or chickpea-fried halloumi make it a full meal.
Make ahead: keeps 3-4 days in the fridge. Add the fresh herbs right before serving so they stay green.
This is a great Thanksgiving or potluck side — it holds at room temperature and travels well.

* A pinch of salt
* 1 teaspoon vanilla extract (optional)
* A handful of fresh blueberries
* A handful of walnuts, roughly chopped
* Honey or maple syrup, to taste
* Ground cinnamon (optional)
* Extra milk, as needed, for a creamier consistency
Method
* Combine the ingredients: Add the rolled oats, milk, and salt to a small saucepan. Bring to a gentle simmer over medium heat, stirring occasionally.
* Cook until creamy: Reduce the heat and simmer for 5–7 minutes, stirring frequently, until the oats soften and the mixture thickens.
* Add flavour: Stir in the vanilla extract and a pinch of cinnamon, if desired. Add a splash of milk for a smoother consistency.
* Prepare the bowl: Transfer the warm oatmeal to a serving bowl and arrange the fresh blueberries and chopped walnuts on top.
* Finish and serve: Drizzle with honey or maple syrup to taste. Serve immediately while warm.
Chef’s Notes
* Use rolled oats for a creamy texture while retaining a pleasant bite.
* Toast the walnuts lightly in a dry pan to enhance their nutty aroma and flavour.
* Add the blueberries just before serving to preserve their freshness and colour.
* Adjust the milk quantity to achieve your preferred consistency.
* For a vegan version, use plant-based milk and maple syrup.
* For a lower-sugar option, omit the sweetener and allow the blueberries to provide natural sweetness.
Serving suggestion: Enjoy this oatmeal warm for breakfast or as a nourishing mid-morning meal.

Salmon with Lemon Cream Sauce
Prep Time: 10 minutes | Cook Time: 15 minutes | Total Time: 25 minutes | Servings: 4
Ingredients
4 salmon fillets (140–170 g each), skin-on or skinless
Salt and black pepper, to taste
1–2 tablespoons olive oil or butter
2–3 garlic cloves, minced
1 small shallot or ¼ onion, finely chopped (optional)
2–3 tablespoons fresh lemon juice
Zest of ½ lemon (optional)
¼–½ cup (60–120 ml) chicken broth, fish stock, or dry white wine
½–¾ cup (120–180 ml) heavy cream
1 teaspoon Dijon mustard (optional)
1–2 tablespoons fresh parsley or dill, chopped
Lemon slices or wedges, for serving
Instructions
1. Prepare the salmon: Pat the salmon fillets dry with paper towels. Season both sides with salt and black pepper.
2. Sear the salmon: Heat the olive oil or butter in a large skillet over medium-high heat. Place the salmon skin-side down first, if using skin-on fillets. Cook for 3–5 minutes per side, depending on thickness, until golden and nearly cooked through. Transfer to a plate and set aside.
3. Sauté the aromatics: Reduce the heat to medium. Add a little extra butter if needed, then sauté the shallot, if using, for 1–2 minutes. Add the minced garlic and cook for 30–60 seconds until fragrant.
4. Build the sauce: Pour in the lemon juice and broth, fish stock, or white wine. Scrape up the browned bits from the bottom of the skillet and simmer for 1–2 minutes to reduce slightly.
5. Add the cream: Stir in the heavy cream, Dijon mustard, if using, and lemon zest. Simmer gently for 3–5 minutes, stirring occasionally, until the sauce thickens enough to coat the back of a spoon. Season with salt and black pepper to taste.
6. Finish the dish: Return the salmon fillets and any accumulated juices to the skillet. Spoon the sauce over the fish and simmer gently for 1–2 minutes, until the salmon is cooked through. For food safety, cook to an internal temperature of 63°C (145°F), measured at the thickest part.
7. Garnish and serve: Sprinkle with freshly chopped parsley or dill. Serve immediately with lemon slices or wedges and your preferred side dishes.
Chef’s Notes
Dry the salmon thoroughly: Removing surface moisture helps achieve a golden-brown sear.
Avoid overcooking: Salmon continues to cook slightly after being removed from the heat, so monitor the fillets closely.
Keep the sauce at a gentle simmer: Avoid vigorous boiling after adding the cream and lemon juice to maintain a smooth consistency.
Balance the acidity: Start with less lemon juice and adjust to taste for the right balance of richness and freshness.
Adjust the consistency: If the sauce becomes too thick, add a splash of broth. If it is too thin, simmer gently for another minute or two.
Use fresh herbs: Parsley provides a mild, fresh finish, while dill complements the salmon with a distinctive aromatic flavour.
Store leftovers safely: Refrigerate in an airtight container for up to 2 days and reheat gently until thoroughly hot.

Creamy Mushroom Chicken
Prep Time: 15 minutes | Cook Time: 25 minutes | Total Time: 40 minutes | Servings: 4
Ingredients
4 boneless, skinless chicken breasts or thighs (450–680 g)
Salt and black pepper, to taste
⅓ cup (40 g) all-purpose flour, for dredging
2–4 tablespoons olive oil or butter
250–340 g (8–12 oz) button or cremini mushrooms, sliced
1 small onion or large shallot, finely chopped
3 garlic cloves, minced
¾–1 cup (180–240 ml) chicken broth
½–⅔ cup (120–160 ml) heavy cream
1 teaspoon Dijon mustard (optional)
¼ cup (25 g) grated Parmesan cheese (optional)
1 teaspoon fresh thyme leaves or 1 tablespoon chopped fresh parsley
2 tablespoons dry white wine (optional)
Instructions
1. Prepare the chicken: Pat the chicken dry with paper towels. Season with salt and black pepper, then lightly coat with flour, shaking off any excess.
2. Sear the chicken: Heat the oil or butter in a large skillet over medium-high heat. Sear the chicken for 3–6 minutes per side, depending on thickness, until golden brown and cooked through to an internal temperature of 74°C (165°F). Transfer to a plate and set aside.
3. Cook the mushrooms: In the same skillet, add a little more butter or oil if needed. Add the sliced mushrooms and chopped onion. Cook for 6–8 minutes, stirring occasionally, until the mushrooms are golden and their excess moisture has evaporated.
4. Add the garlic: Stir in the minced garlic and cook for 30–60 seconds until fragrant. Add the white wine, if using, and scrape up the browned bits from the bottom of the skillet.
5. Make the creamy sauce: Pour in the chicken broth and simmer until slightly reduced. Stir in the heavy cream and Dijon mustard, if using. Add the Parmesan cheese and thyme, then simmer gently for 3–5 minutes until the sauce thickens slightly. Adjust the seasoning to taste.
6. Combine and serve: Return the chicken and any accumulated juices to the skillet. Spoon the mushroom sauce over the chicken and simmer gently for 1–3 minutes until heated through. Garnish with fresh parsley or thyme and serve immediately.
Chef’s Notes
Choose the right chicken: Thin chicken cutlets cook evenly and quickly, while boneless thighs provide a richer flavour and remain tender.
Brown the mushrooms well: Avoid overcrowding the skillet to allow the mushrooms to caramelise rather than steam.
Control the sauce consistency: Simmer gently to thicken the sauce. If it becomes too thick, add a splash of chicken broth.
Avoid boiling the cream: Keep the sauce at a gentle simmer to maintain a smooth, creamy consistency.
Enhance the flavour: Fresh thyme, Dijon mustard, Parmesan, or a splash of white wine adds depth to the sauce.
Store safely: Refrigerate leftovers in an airtight container for up to 3 days. Reheat thoroughly to 74°C (165°F), adding a little broth or cream if needed.
Serving Suggestions
Serve this creamy mushroom chicken with mashed potatoes, steamed rice, buttered egg noodles, roasted vegetables, or crusty bread. The rich mushroom sauce pairs particularly well with simple sides that absorb its flavour.
