Minnie has been experimenting with gin and tonic pancakes! 2 eggs, 100ml milk, 150ml tonic, 50ml Copper Lion gin, 100g plain flour. Chill for a few hours or overnight to let the gluten expand. Then pour and flip. To serve, top with sugar, cinnamon & lime. #PancakeDay
