Been tracking this for a bit - it's very random. Channels won't show up for certain games, across different accounts, and whether I'm logged in or out... No reliable reason why. But definitely happening. It's very weird.

I had to do extra prep on stream for all the demos I played. It wasn't as simple as just installing demos because I wanted to make sure I wasn't supporting AI slop to the best of my ability. I really want Valve to implement an AI slider. Just let me slide of games that use AI.

I also find it interesting at what point folks will be okay with a certain level of AI and if the devs disclosing said use will help or hinder them. For example, I found a game in which AI was used for translation, but then double-checked by a human etc.
