Our friend gave us red snapper fillets from his charter trip, so my husband grilled it over charcoal tonight. It was magnificent, very smoky. What a great gift!!
On the Airbnb topic: We’ve stayed maybe 100 times and will keep doing so. I am always sooo grateful to have a home to stay in BY OURSELVES instead of a generic, claustrophobic (!) hotel room. Yes, they all have something we don’t like. Hotels have many things we don’t like! But what a luxury to have space to sit, to cook, to eat at a table in the prettiest, often most remote places.
I was wearing pajamas on the Airbnb porch a few months ago watching this guy. 👇 There aren’t any hotels nearby!
We demolished the mostly finished summer garden this morning after a final harvest. I’m grateful for God’s provision of a freezer full of vegetables and so many beautiful flowers!! Tomorrow is winter planting day!
What are we eating today? I made egg casserole with cottage cheese, cheddar, green chilis and taco seasoning for breakfast.
Dinner is braised beef short ribs with baby Bella mushrooms. Short ribs come from the Chuck part of the cow; they’re fatty and delicious!
All of this came from Walmart. Not particularly expensive food but cooked fancy.

A brown sugar spice rub with smoked paprika, chipotle, cumin, allspice & cloves, and a bourbon molasses sauce with tomato, apple cider vinegar & worcestershire.
15 minutes prep. Slow-cooked until fork-tender.

The cooler weather is perfect for warm and cozy dinners. Tonight I made cowboy chicken and cornbread. Chicken breasts blackened with a homemade southwest seasoning blend. Homemade garlicky jalapeño black beans, fresh off the cob sweet corn, fresh diced tomatoes, fresh diced jalapeños and diced sweet onions make the base here. Chicken gets a Monterey Jack and Longhorn cheddar topping before baking for a few minutes in the oven. Quick squeeze of lime juice then optional toppings for the boy. Cornbread has fresh jalapeños and some of the cheese folded in. Loads of flavor in this dish.
I’m watching “Seeking Persephone,” which is mindless silliness with pretty British period costumes and scenery. I just realized that the plot is Beauty and the Beast. 😂
I braised a chuck roast yesterday with carrots and herbs, onions and peppers, garlic, red wine, bone broth. There’s really nothing better!

My workout energy was low this morning but I showed up. 🙌🏻 Why? Because I need to be able to show up for my family, even at age 68.
For the past week my husband and I moved in and cared for our 4 small grandchildren while their brother had serious heart surgery. Five years ago I was barely able to walk, let alone lift a 40 pound three year old onto a counter stool and play baseball with 6 and 7 year old boys. Thanks be to God for people He put in my path to help me get fit and healthy, like @mimikmorgan and @virtahealth .
I will keep showing up!! 💪
