Ok @kentonp_ag second go at Australian Grains Industry sourdough. Inspired by your example 25% barley is going in as @WattsRiverBeer beer (La Trobe grown at #Murtoa). The rest chickpea flour, canola oil, rolled oats and of course wheat (50/50 white bakers & stoneground wholemeal)
