Does that mean the Conqueror Haki erased the modifications somehow? 🤔

So I wasn't entirely wrong here. Sanji was limiting himself because he was afraid of becoming like Germa.

Is this what Sanji is so scared of?
He's afraid of being too self-centered would make him too much like Germa, but went overboard by being too humble.
"You are too selfless, so you need to be more selfish" (selfish = self-care) is a common manga trope.

Sanji is sitting on a roof ledge, speaking literally from a "higher position".
It makes the "You hold your head too high" quote feel more like the "You're not bowing low enough" sense rather than "Don't be arrogant". A bit like when Gunko said it to the guards.

He said 頭が高い. It means "you're being impudent/too arrogant", but the literal translation of "you hold your head too high" (i.e you're not bowing low enough) is just more epic LOL.

I had to reread over and over again to make sure I wasn't reading it wrong.
"My worth is GIVEN to me" is obviously not a positive mindset. In this moment obviously Sanji is still putting himself down.
Can't wait to see how Sanji finally overcame his doubts.

Iva mentioned both "avoiding attacks" and "self-defense", but "Defense" 防御 seems to be what Sanji focused on. The kana also reads "guard", like Chopper's "guard point" defence mode (different kanji though). Is it related to how Sanji exploded Kizaru's laser?
