Our cheesemonger Rugile thinks you should try Cais na Tire ( @caisnatire ) a melt-in-the-mouth sheep milk cheese from Tipperary. It has a lovely balance of salt and sweetness with a long finish of caramel notes. Pop in to get yours for the weekend!
