Hi guys - just to let you all know that I am retiring in the next few months and selling up the biltong business. Going to do my long awaited woodworking hobby and taking some well earned time off. I'll have all sorts of small home goodies once I get started.

Man 'o man we had a good supper tonight. Beef short ribs - brined overnight then smoked 2 hrs. Then in a baking tray with broth, jam preserve, honey, butter, apple juice, sliced onion, mushrooms. Covered with foil and another 2 hr on the weber kettle turned coup[le of times OMG!!

Guys, if im not here tomorrow it's because Mrs. Biltong has done me in - can blame my friend Paul Bennett from canadabiltong.com! He talked me into buying a vacuum marinating tumbler for cutting out all the extra time marinating of biltong and producing a better marination.
