Minnie is the next breakout brand.
If Dave's Hot Chicken and Swig had a baby it'd look something like Minnie Bird.
Minnie Bird is an upstart franchise co-founded by Sean Thomas, the grandson of Wendy’s founder Dave Thomas, that has 3 locations in the Chicagoland area and is known for several things:
- Fried chicken
- Dirty sodas
- Lots of dipping sauces
- Free ice cream
It costs between $575k - $2m to open a location. This is a huge range and will mainly be impacted by the required buildout costs of that specific location, but is not uncommon for the QSR space.
Its original company-owned location generated $2.3m in revenue in 2025.
I'd like to know what the net profit generated was off of that, but they didn't disclose it unfortunately.
Has anyone else eaten their yet? Do you think this concept has staying power?

People love to say "flipping burgers" like most of you wouldn't die the second you stepped into a restaurant kitchen
