You’ll see all sorts of things — maybe unexpected — in my tweet stream. Here’s why. xitter.cf/nprscottsimon/status/9…
I despair when people say, "I don't listen to @NPR to hear..." (fill in with repellent opinion, music, sport, or literature you're sure offends you). NPR exists to bring you the world, challenge, surprise, inform, even outrage, not cosset the audience.

McDonald's uses 3 different eggs. Only 1 of them is cracked in the restaurant. The Egg McMuffin gets a Grade A egg cracked into a ring on the grill. The Big Breakfast scramble is poured from a carton of eggs and citric acid. The folded egg on the biscuits and McGriddles is eggs, nonfat milk, modified food starch, salt and citric acid. A supplier cooks it, folds it and flash freezes it. The store warms it on the grill. Citric acid keeps a cooked egg from going gray on a hot hold, and the starch holds water in a patty that's been frozen and thawed so it doesn't weep on the biscuit. The milk adds volume and softens the bite. McDonald’s purchases over 2 billion eggs in the US and Canada a year.

This is playing with fire. Minks and ferrets have such humanlike lung cells that they’re the standard for testing human flu transmission. (Cows aren’t!) An H5N1 epidemic raging in a mink farm is basically the plot for Dr. Evil tries to spark a pandemic. Luck isn’t a plan.
Here’s something you should know about minks: They have lungs and airways remarkably similar on a cellular level to those of people. They’ve spread flus and infected humans before with COVID-19. Right now, bird flu is spreading on a Utah farm filled with thousands of them… 🧵

Skinless hot dogs had a skin. The plant peeled it off. Oscar Mayer and Ball Park skinless franks start the same way. The meat is chopped with ice, salt and cure into a smooth batter, then pumped into a long cellulose casing, a tube of plant fiber that isn't meant to be eaten. The tube gets twisted into links, hung on racks, smoked and cooked until the batter sets. Then it goes through a chiller and into a peeler, where a blade slits the casing and a jet of air strips it off. The casing goes in the trash and the hot dog goes in the package. The hot dogs with snap are the ones that kept the casing, sometimes sheep intestine, and the label has to say if it came from a different animal than the meat. The federal standard for a hot dog allows up to 30% fat, or 40% fat and added water combined, plus 3.5% binders like nonfat dry milk or cereal.

There’s not a single MAGA Republican in a position of power anywhere in Los Angeles, but Nithya’s supporters are so fucking stupid, they think MAGA is at fault for communist LA being such a mess. This place has been run entirely by far left radicals for decades, and every state that Angelenos are fleeing to is full of (and run by) MAGA republicans. We are approaching levels of IQ once thought impossible among sentient beings.

It's a bye week for the @BuffaloBills and the Pats played and lost -- thanks, Bears -- on Thursday night. Remind me, please: what are we supposed to do on a fall Sunday afternoon when there's no football game to watch?

Nine in ten American strawberries come from a few valleys in California where the soil is killed with a First World War gas before every planting, and the fields are visible from the road because they are wrapped in plastic to keep the gas in. Chloropicrin was made for the trenches. It was a lung and eye agent, a vomiting gas, fired in shells to force men out of their masks. Now it is injected into the ground at Watsonville and Oxnard every year, under tarps that hold the fumes down for a week, and it does to the soil what it did to a trench: everything in it dies, the fungi, the bacteria, the worms, the insects, until the dirt is as sterile as a hospital tray. Then the strawberries go in, on raised beds of plastic, fed by drip line with everything a living soil would have given them, and the plastic and the gas go in again next year, because a dead soil has no defence against the one disease that gets through. For forty years the gas was methyl bromide, which eats the ozone layer, and when the world banned it in 2005 California's strawberry growers got themselves an exemption and kept using it for another decade, the last major crop on earth to do so. Chloropicrin was the replacement, and the state's own pesticide regulator lists it among the commonest causes of farmworker poisoning in California. The men who apply it are mostly undocumented, the drift has emptied a school in Monterey County, and the strawberry has topped the list of the most pesticide-contaminated produce in America for most of the last decade. Every year the industry calls it a heart-healthy antioxidant superfood, and every year the field it came from is gassed. The cow in the pasture next door has never once needed the soil under her sterilised. The strawberry cannot be grown at that scale without it, and the war gas is the price of a punnet in January.

Great Value frozen shrimp has 3 ingredients. Shrimp, salt and sodium tripolyphosphate. Sodium tripolyphosphate is a phosphate salt. The shrimp get soaked in a tank of it before they're frozen, and the phosphate loosens the muscle proteins, so they hold on to water. The shrimp come out of the tank heavier than they went in, and the bag is sold by weight, so part of what you pay for is tank water. It also keeps them from drying out in the freezer. Soaked shrimp sit in a puddle, steam instead of sear, and feel slick and a little rubbery. Untreated shrimp brown in the pan. Costco's Kirkland raw shrimp says no chemicals added and no preservatives on the bag. The FDA allows the phosphate, so the check is the ingredient list on the back of the bag, under the net weight.

The scrambled eggs at a hotel breakfast are 19% water, and they're dyed. A lot of hotels and cafeterias pour them from a carton of Papetti's Breakfast Blend. The spec sheet reads whole eggs, 19% water, then under 2% of salt, xanthan gum, citric acid, annatto color and natural butter flavor. Papetti's is part of Michael Foods, one of the biggest egg processors in the country. Every ingredient has a job on a steam table. Xanthan gum holds the added water in the egg so it doesn't weep into the pan. Citric acid keeps the eggs from turning gray or green under a heat lamp. Annatto puts back the yolk color the water washed out. The butter flavor is there because nobody is going to add butter. The carton keeps for 98 days in the cooler. The plain version from the same company is whole eggs, whey, skim milk, xanthan and citric acid, with almost no added water and half the sodium.

Few know this, but old-school mobsters used to hide out from the law in a place called Empeyville NY. This was as recently as the 1980's. There's almost nothing there; it's a crossroads in the woods. But my uncle who's in the property maintenance business used to take care of camps and second homes out that way. Saw Cadillacs, armed guards, perimeter fences, guys in suits coming and going (always looking tense), the whole works.

Movie theater popcorn is yellow before any butter goes on it. The color is in the salt. The salt is called Flavacol. Gold Medal makes it, and it goes into the kettle with the oil and the kernels before they pop. The spec sheet lists salt, natural and artificial flavors, Yellow 5 Lake and Yellow 6 Lake. The Better Buttery version adds an artificial sweetener, acesulfame potassium, so the popcorn comes out of the kettle salty, yellow and a little sweet. A lake is a dye stuck to aluminum so it won't dissolve in water. A popcorn kettle has no water in it, only hot oil, so a lake is the kind of color that works there. Flavacol is also ground much finer than table salt, which is why it coats every kernel instead of falling to the bottom of the bag.

Jack Link's beef jerky says no added nitrites on the bag. The asterisk under it says except those from cultured celery extract. Celery is high in nitrate. Ferment it and the nitrate turns into nitrite, so the meat is cured with nitrite either way. Old Trapper and Oberto just print sodium nitrite in the ingredient list. Jerky also has no federal standard of identity. The one number USDA held it to, a moisture to protein ratio of 0.75 to 1, was deleted last September. There is now no rule for how dry a strip of meat has to be before it can be sold as jerky. Sunday's issue goes through the bag ingredient by ingredient. It follows the beef through the plant, where 4 pounds of raw meat come out as 1 pound of jerky, and compares what you pay for the bag to what the beef in it costs.
