Whereas in China, which is my proxy for Chinese cuisine, it accounts for ~64.5% of all meat consumption.
Anecdotally too, I primarily buy pork and chicken because of the recipes I use and because of how much more expensive beef is.
On an impactfully racist side, this doesn't affect those fine cuisine, Western restaurants but this does disproportionately impact Asian and Hispanic cuisine.
In the US, pork accounts for ~23% of all meat consumption.

if the increased cost of pork is up either 15% or 60% as per the original article, the cost of the final dish goes up 5% or 20%. Somehow I don't see incomes going up 5% or 20% to compensate.
