China has quietly become a major producer of luxury foods — from caviar and foie gras to macadamia nuts. In just a couple of decades, domestic producers have come to dominate global markets and drive down prices.
China now accounts for over 40% of global caviar exports, is the world’s second-largest macadamia producer, and turns out thousands of tonnes of foie gras each year — alongside cherries and wild truffles.
