This is Frico Friulano, a legendary three-ingredient comfort meal from the mountains of northeastern Italy. It started centuries ago as a way for alpine cheesemakers to stretch scraps of Montasio cheese.
They added grated potatoes and sweet caramelized onions, frying it all down until the edges got super dark, glassy, and ultra-crispy, while the inside stayed completely gooey and melty. It requires some serious patience to flip, but it is the ultimate cold-weather food.
